SafCider™ AC-4 is a yeast strain that offers a very good assimilation of fructose and is excellent for low gravity ciders. Trials based on French cider recipes have shown it delivers an intensely fresh aromatic profile with loads of apple and floral notes, as well as a crisp mouthfeel.

 

Dosage / Temperature

  • 2-4 g/20L for first fermentation
  • 6-8 g/20L for prise de mousse
  • Broad fermentation temperature spectrum: 10-30°C (50-86°F)
