Blue Lake Milling Rolled Rice is derived from brown grains of rice, that have been rolled into flat flakes under heavy rollers in various thicknesses. It is unmalted and provides additional body with a clean taste.

 

They have a large surface area and undergo steam treatment for a minimum of 20 minutes, so they hydrate and disintegrate quickly and offer a light, clean, and crisp character to the finished beer. It does not have the enzymes needed for conversion so should be mashed with malted grains; additionally it may be beneficial to cook the rice separately prior to mashing to ensure they are completely gelatinized.

 

Use: Often used in American lagers, Cold IPAs, light / gluten-free beers and saisons up to 40%.

Shelf life: At least one year when stored properly in dry conditions.
